1 pkg (170 g) Baby Spinach ¼ c. olive oil 2 Gala apples cored and thinly sliced 2 Tbsp. maple syrup (the real stuff not flavored) 2 Tbsp. balsamic vinegar
Place spinach in a large serving bowl.
Heat olive oil in pan over medium heat; cook apples for 1-2 minutes or until just softened. Whisk together maple syrup and vinegar; pour into pan and cook for 1-2 minutes. Pour over spinach and toss. Serve immediately.
