1 egg 1 cup milk 1/4 cup oil 2 cups sifted flour 1/4 cup sugar 3 tsp. baking powder 1 tsp salt 3/4 cup well drained blueberries
Beat egg lightly with fork, stir in milk and oil. Sift dry ingredients, flour, baking powder, sugar and salt and add to egg mixture. Stir until flour is just moistened. Batter should be lumpy, Do Not Overmix. Fill greased muffin tins 2/3 full and bake at 400º for 20 to 25 mins.
