1 Tbsp. Olive Oil
1.25 lb boneless chicken breast; cooked and cut into bite size pieces
1 1/3 c. chopped onions
1/2 c. chopped celery
3 carrots, halved lengthwise and sliced
2 garlic gloves, minced
1/3 c. brown rice
1/3 c. sliced green onions
3/4 tsp salt
1/2 tsp dried basil
1/4 tsp pepper
32 oz. chicken broth

Heat oil in pan over medium high heat. Add onion and next 3 ingredients; saute 10 minutes or until tender. Stir in chicken, broth, rice, and remaining ingredients; bring to a boil. Cover, reduce heat, and simmer 20 minutes or until rice is tender
