7 - 9 cloves of garlic, minced
2 T. vegetable oil
2 (3 to 3 1/2 lb.) eye of round beef roasts

Horseradish Sauce:
Combine:
1 (16 oz.) sour cream
1/2 c. prepared horseradish, drained
3/4 c. fresh bread crumbs
1 c. whipping cream, whipped stiff
Fold horseradish/sour cream mixture into whipped cream. Refrigerate, covered. Yields 3 1/2 c.

Directions:
Combine garlic and oil; brush the surface of the meat. Sear roasts on ALL sides 2 inches under the broiler or 3 inches from hot coals for 5 minutes total. Transfer meat to a rack in a shallow roasting pan. Roast in a preheated 400 oven until roast reaches desired doneness:
Rare: 30 to 35 minutes or 135 on meat thermometer.
Medium rare: 35 - 40 minutes or 140.
Cool. Wrap in foil; refrigerate overnight. Slice thin and arrange on platter. Serve with sauce on small buns.
