4 large eggs
2/3 c. granulated sugar
2 2/3 c. scalded milk
1/2 tsp. salt
1/4 tsp. nutmeg
1 tsp. vanilla

Directions:
Directions:
Scald milk and allow to cool slightly. Beat eggs, add sugar, salt, nutmeg and vanilla. Stir well and pour warm milk over mixture. Stir and mix well. Line a 9" pan with pastry. Allow enough pastry so that it will stand up a little above top of pie pan and flute edge so that it will be firm. Pour stirred filling into crust and sprinkle extra nutmeg on top.

Preheat oven to 450. Slide pie into oven and allow to bake for 10 minutes at this temperature; then turn down to 425. Bake 10 minutes more and, at the end of this time, test by slipping knife in middle of pie. If knife comes out clean, remove pie from oven. If not allow to remain in oven an extra time of 3 - 5 minutes until knife comes out clean. Do not bake too long.

Secret to Success: Timing of baking must be perfect. It's a light dessert and a perfect complement to a good pastry. Of course you must like a good custard. And large eggs make it richer for better flavor.

This is Martha's favorite, easy and delicious pie which she's made for many years. The recipe was taken from The Frankfort Morning Times Cookbook of which Grandma Maymie gave Martha a copy. It was published in January, l961. The recipe was submitted to the cookbook by Mrs. John W. Black, Route 1, Frankfort.
