1 cup granulated sugar
1/2 cup dark brown sugar
1/2 cup vegetable oil
2 eggs
3/4 tsp. salt
1/2 Tbsp. ground nutmeg
1/2 Tbsp. ground cinnamon
1 tsp. ground cloves
1/3 cup water
1 cup pumpkin
1 2/3 cups all-purpose flour
1 tsp. baking soda
1/2 cup raisins (optional)
1/2 cup chopped walnuts (optional)

Directions:

With electric mixer combine sugars, oil, eggs, water and pumpkin; mix together on medium speed until thoroughly combined. Sift together flour, baking soda, salt and spices. Add dry ingredients gradually to the wet mixture, beating on low speed. If desired, fold in nuts and raisins. Pour into a well-greased loaf pan. Bake at 350 degrees Fahrenheit for approximately 1 hour or until sides pull away from the pan and a toothpick comes out clean. Do not over bake. Cool on a wire rack. When cool, wrap in aluminum foil. Let sit overnight before cutting for best results-we have never been able to wait that long
