1 3/4 cup warm water (105-115 degrees)
1 pkg dry yeast (0.6 oz)
1 tsp sugar
2 tsp salt
3 Tbsp salad oil
4 1/2 to 5 cups flour
1 egg
(1/4 cup Kosher salt)

WASH:
1 qt water
2 Tbsp lye
1 tsp soda

Directions:
Directions:
Measure warm water into large, warm bowl. Add yeast. Stir until dissolved. Add sugar, salt, oil, and 3 cups of flour. Beat until smooth. Add remaining flour. Turn dough onto well-floured pastry cloth and knead for 8 to 10 minutes, or until dough is springy. Place in large greased bowl. Turn greased top of dough up. Cover with a towel. Place in warm place until doubled (about 1 hour). Punch down dough and cut in half. Set 1/2 aside and cover with towel. Cut remaining half into 8 pieces. Work one piece at a time. Keep rest covered. Make each piece into 20" rope. Occasionally lift rope and stretch. Dip formed pretzels into wash and bake on a well-greased pan at 425 for about 12 minutes.
