1 small green pepper, chopped
1 can mushroom stems (4 oz.) , reserve liquid
1/2 c. margarine or butter
1/2 c. flour
1 tsp salt
1/2 tsp pepper
1 1/2 c. milk
1 1/4 c. chicken broth
2 c. cooked, diced chicken
1 jar (2 oz.) pimentos, drained

Stir green pepper and mushrooms in butter in 3 qt. saucepan over medium heat for 5 minutes. Stir in flour, salt and pepper. Cook over low heat, stirring constantly until bubbly. Remove from heat. Stir in milk, broth, reserved mushroom liquid. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in chicken and pimentos; heat until hot. Serve over any biscuit, corn bread, fancy bread, etc.

SECRETS: Important to watch cooking carefully and to constantly stir to avoid sticking/burning; this is very easy to throw together and so very good; serve with a green vegetable/salad and a scrumptious dessert - and you are done!
