2 c flour
2 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
8 medium-size Granny Smith apples approx 2 3/4
lb, cored
2 c brown sugar
1 c sugar
1/4 c vegetable shortening
2 eggs
1 c chopped walnuts or pecans

Caramel:
1/2 c brown sugar
1/2 c sugar
1/2 c butter
1/2 c cream or milk
1 tsp corn syrup
1/2 tsp vanilla
1/2 tsp rum flavoring

Heat oven to 350. Coat 13 x 9 x 2" baking pan with cooking spray.

Cake: In a small bowl, whisk together flour, baking soda, cinnamon, and salt. Coarsely, chop apples (with skins on). Set aside. In a large bowl cream together both kinds of sugar, shortening and eggs until smooth - about 2 minutes. Stir in flour mixture, chopped apples, and nuts. Scrape into prepared pan and smooth top.
Bake at 350 for 50-60 minutes.

Caramel: In a small sauce pan, combine both kinds of sugar, butter, cream, and corn syrup. Bring to a boil over high heat. Boil or 30 seconds.
Remove from heat. Beat until cool, about 3-4 minutes. Stir in vanilla and rum flavoring. Cut cake into squares and drizzle with warm caramel.
