2 1/2 cups flour
1 1/2 cups sugar
1 tsp soda
1 tsp salt
1 tbsp cocoa powder
1 1/2 cups vegetable oil
1 cup buttermilk, room temperature
2 large eggs
2 tbsp red food coloring
2 tsp white balsamic vinegar
1 tsp vanilla

Frosting:
28 ounces cream cheese
1 pound powdered sugar
2 sticks butter
2 teaspoon vanilla

Directions:

Sift together dry ingredients. In separate bowl, blend oil, buttermilk, eggs, food coloring, vinegar and vanilla. Add dry ingredients and mix until smooth. Line muffin tins with papers and cook at 350 for 20-25 minutes. Cool and frost.
