1 1/4 cup flour
1 tsp baking powder
1/4 tsp salt
1 cup sugar
1/2 cup butter, melted and cooled
1 egg
1/2 cup plain yogurt
2 tsp grated lemon zest
3 tbsp freshly squeezed lemon juice
1/2 tsp oil or extract

Directions:
Directions:
Combine dry ingredients. Whisk together sugar butter and eggs until smooth, add yogurt, lemon zest and juice and lemon oil, beating until smooth. Add flour mixture, beating until smooth.
Scoop into prepared tins. Bake at 350 for 22-25 minutes or until tops of cupcakes spring back when lightly touched. Let cool in pan for 10 minutes, remove from pan and complete cooling on rack. Frost with Vanilla Cream adjusted with lemon juice.

Vanilla Cream: 1 1/3 cups powdered sugar, 1/2 cup butter, softened. pinch of salt, 3 tbsp whipping cream, 2 tbsp freshly squeezed lemon juice and 1/2 tsp vanilla. Whip to spreading consistency, adjusting sugar or liquid as needed.
