2 lbs. small red potatoes, chopped
1 large onion, chopped
1 8-oz. carton sour cream
1 c. Monterey Jack cheese, shredded
1 c. cheddar cheese, shredded
1/2 tsp. salt
1/2 tsp. cayenne pepper
1 can diced tomatoes

Directions:
Directions:
Preheat oven to 350º. In a large saucepan, boil potatoes and onion in a large amount of water until tender; drain and return to saucepan.
Stir in the sour cream, cheeses, salt, and cayenne pepper. Stir in diced tomatoes. Spoon into an ungreased 2 qt. baking dish.
Bake uncovered about 30 minutes, or until heated through.
