1/3 c. sun-dried tomatoes packed in oil drained
3 T. balsamic vinegar
1 clove garlic pressed
1/4 tsp. salt
1/4 tsp. red pepper flakes
2/3 c. extra virgin olive oil
4 large ripe tomatoes, sliced into 1/4-inch thick slices
3/4 lb. fresh mozzarella, sliced into 1/4-inch thick pieces
1/2 c. fresh basil leaves cut into julienne strips

For dressing, in food processor, blend sun-dried tomatoes, vinegar, garlic, salt and red pepper flakes. Process until combined.
With machine running, gradually add olive oil in a steady stream; process until well combined.
On a large, chilled platter, arrange tomato slices and mozzarella cheese. Top with fresh sliced basil. Just before serving, drizzle with dressing and serve immediately.
Any remaining dressing may be served with a fresh salad or used with fresh crusty bread for dipping.

This is also known as Caprice Salad.
I serve it on a bed of greens on a large round (deep) platter, and I slice the mozzarella julienne style, to make it easier to handle.
