2 Tbs olive oil
1 onion, chopped fine
2 cloves of garlic, minced
1 lb of ground beef, ground turkey, or chicken breast
1-2 yellow crookneck squash, diced
1-2 zucchini, diced
2 medium tomatoes, diced
4 ears of fresh corn, cut off the cob and reserved in a bowl (frozen corn also works well)
1 tsp salt
1 tsp of oregano (fresh tastes wonderful)
pepper to taste
1 cup of cheddar cheese

Saute olive oil, onion, garlic, and meat in a large pan. When meat is cooked add the squash and zucchini, allow to soften add salt, pepper, and oregano. Add corn, then tomatoes. When the vegetables are cooked top with cheese. Serve immediately!!
