Ingredients: DRESSING INGREDIENTS: ½ tsp. salt pepper to taste 2 T. sugar 2 T. vinegar ¼ c. vegetable oil 4 to 5 drops Tabasco sauce 1 T. dried parsley flakes
SALAD INGREDIENTS: ¼ c. almonds, whole or sliced 2 T. sugar ½ head romaine lettuce ½ head red-leaf lettuce 1 c. celery, chopped 2 to 3 green onions, thinly sliced 1 11-oz. can mandarin orange segments, drained

Directions:TO MAKE DRESSING, combine all ingredients in a jar. Cover and shake vigorously. Refrigerate until ready to use.
TO MAKE SALAD, caramelize the almonds: melt sugar over medium heat, stirring occasionally. Add almonds and stir constantly, about 5 minutes. Cool; break almonds apart and reserve in a covered jar until ready to use. Wash and dry lettuce and tear into bite-size pieces. Combine with celery and green onion. Toss lightly. If you’re making this the day before, the greens should be stored in a large plastic bag. To assemble, combine salad greens, almonds, mandarin oranges (drained) and dressing. Toss well and serve immediately. |

Notes: This recipe is delicious as is, but I sometimes add Craisins (dried cranberries) and feta cheese—also very good! If I'm short on time, I'll use packaged salad greens.
