3 egg whites
1 cup sugar
½ tsp baking powder
1 tsp vanilla
12 finely crushed soda crackers
½ cup pecans
peaches
whipping cream (or mix ½ and ½ with Cool Whip—because it will stand up better)

Directions:
Directions:
Beat 3 egg whites until stiff. Egg whites should be room temperature. Beat in 1 cup sugar, ½ tsp baking powder, and 1 tsp vanilla. Fold in 12 finely crushed soda crackers and ½ cup pecans. Pour into buttered pie tin (9 or 10”).
Bake at 350 for 30 minutes. Turn off oven and open oven door for a few minutes, then remove. Fill with peeled and cut up peaches. Then top with real whipping cream (or mix ½ and ½ with Cool Whip—because it will stand up better) and refrigerate for 4 hours.
