3/4 c. Sugar
2 tsp. Cornstarch
1/4 tsp. Salt
1-1/2 c. Water
1 tsp. Lemon rind
1 c. Raisins
1 Tbsp. Lemon Juice or vinegar
1 Tbsp. Butter

Directions:
Directions:
This is a double crust pie.
In saucepan, mix together first 6 ingredients and cook over low to medium heat until thickened. Add butter and lemon juice (or vinegar) and cook 2-3 minutes longer. Cool. Pour in pie shell. Cover with top crust and make a few slits in top crust. Bake at 425 for 15 minutes. Lower oven temp. to 350 and bake another 15 minutes. Cool on wire rack.
