2 cups of self-raising flour 75g butter 1\4 teaspoon nutmeg 1 cup castor sugar 1 cup cream 1 cup of mashed pumpkin
Place all the dry ingredients into a large bowl. Melt butter. Stir in butter, cream and pumpkin, mixture when folded should be quite firm for muffins. Place cooking spray into a 12-hole Muffin dish and fill with mixture evenly. Place into 180-degree oven and bake for 20 – 30 minutes or until golden brown. ENJOY!
