6-8 tilapia filets
(grill, bake or saute) My Mom sautes hers with flour and butter.

Topping:
2 T. butter
3 garlic cloves (chopped)
1/2 onion (chopped)
4 Roma tomatoes (diced)
3/4 c fresh cilantro
1/4 c nacho jalapeņo peppers (diced)
1-2 T. jalapeņo juice
salt and pepper to taste
1-2 T. lemon juice can be added if needed




Directions:

Melt butter in sauce pan. Add onion and garlic and saute' until soft. Stir in tomatoes, cilantro, jalapeņos and juice. Salt and pepper to taste. Spoon over prepared fish.

My Mom still gets calls from my former boyfriend for this recipe. Although the fish is bland, the sauce has a "bite".
