2 cloves garlic
1 T. butter
4 (14 oz.) cans chicken broth
24 oz. pkg. frozen cheese tortellini
1 (10 oz.) box frozen spinach, thawed
1 (14.5 oz.) can diced tomatoes
Parmesan cheese

Directions:
Directions:
Saute garlic in butter. Combine with broth and bring to a boil. Add the tortellini, reduce the heat and simmer 10 minutes. Add the spinach and tomatoes and simmer 5 minutes. Top with Parmesan cheese.

This is another favorite soup recipe. It is very good and better yet, it is quick. I'm all for quick and easy recipes.
