1 1/3 cups flour
3/4 cup cocoa
1/2 cup oil
1 cup soy milk
2 eggs
2 cups sugar
1&1/2 tsp baking soda
1&1/2 tsp baking powder
2 tsp vanilla
1 tsp salt
pinch of instant ground coffee
1 cup boiling water to add at end
whipped cream, strawberries and other toppings

Directions:

Preheat oven to 375 degrees.

Mix the dry ingredients first. Mix all the wet ingredients, except for the boiling water. Slowly combine the two, and mix well until there are no clumps. add boiling water and pour batter into ramekins or bundt pan. Bake until firm but soft in the middle. Add the whip cream and strawberries before serving.

Ora served this cake every time we came for Shabbos. It is delicious and "muddy" on the inside. Serve warm with cold whip cream for a wonderful contrast. This cake served in ramekins has impressed every guest!
