6 cloves garlic minced
2 onions cut in long strips
2 eggplants cubed
2-3 red peppers cut into long strips
5 tbs ketchup
2 tbs soy sauce
salt and pepper to taste
oil for frying

Directions:
Directions:
In a large pan or skillet, begin by frying the onions and garlic, until translucent. Then add the peppers and saute until soft. In another pan, fry the eggplants until fully cooked and soft- usually takes about 30-45 minutes. Add all the ingredients to bowl and mix in the ketchup and soy sauce, salt and pepper. Serve cold or room temp. You may halve the recipe.
