3 eggs, beat for 5 minutes
1 c. sugar
1 tsp. soda
1 tsp. baking powder
1 tsp. cinnamon
2/3 c. pumpkin
1 c. chopped pecans (optional)

Filling
1 c. powdered sugar
1 8oz. cream cheese
4 T. butter
1 tsp. vanilla

Directions:

Mix cake ingredients well, Pour into a well greased 15x101/2 cookie sheet. Sprinkle with chopped pecans. Bake at 375 for 15 minutes. Turn out on a tea towel covered with powdered sugar. Roll up with the tea towel and let cool completely.
Mix filling ingredients. Gently unroll cooled cake. Spread with filling. Roll up again. Sprinkle with powdered sugar and refrigerate. Slice and serve.

We count on my sister-in-law to bring this to all Thanksgiving gatherings. It is much easier than it sounds and it makes a beautiful presentation once sliced.
