1/2 c olive oil
1/2 c white vinegar
1 2oz. jar diced pimiento (drained)
3 T chopped parsley
3 T minced green onions
3 cloves minced garlic
1 tsp. basil
1/4 tsp. salt
1/2 tsp. pepper
1 8 oz. cream cheese
1 8 oz. Cheddar cheese

Directions:
Directions:
Combine all ingredients except cheeses. Cut cheese into thin, uniform, slices. Arrange alternating each kind of cheese. Pour mixture over cheese and let marinate for up to 8 hours. Serve with thinly sliced French baguette bread. or crackers.

Everyone always wants this recipe after trying it. If I am in a hurry I cube the cheeses and toss all the ingredients together. Also, slightly freezing the cream cheese makes it easier to cut.
