1 small box Uncle Ben's wild rice
2/3 c. plain yogurt
1/2 c. sliced green onions
3 T. olive oil
1/4 tsp. grated lemon zest
1 1/2 T. fresh lemon juice
1/2 tsp. salt
1/4 tsp. pepper
2 c. shredded chicken
1 c. chopped pecans
1/2 c. dried cranberries

Prepare rice. Cool. Combine yogurt, onions, olive oil, zest, juice, salt, pepper. Add remainder. Serve over lettuce.
