Pastry for 2 crust pie
5 cups firm, ripe peaches
1/2 tsp cinnamon
pinch of salt
3/4 cup sugar
2 tbsp tapioca
1 tbsp lemon juice

Directions:
Directions:
Preheat oven to 400 . Mix together in bowl the peaches, cinnamon, salt, sugar, tapioca and lemon juice. Pour into unbaked pie crust. Cover with top crust. Cut holes in top crust. Sprinkle lightly with additional sugar. Bake for 40 to 50 minutes.
