1 lb. dry Great Northern (white) beans
1 chopped medium onion
1 bunch chopped celery
1 chopped fresh tomato (or more)
1/4 c. fresh lemon juice
1/2 tsp. salt
1/4 c. olive oil

Directions:
Directions:
Place beans in a medium-size saucepan and add enough water to just cover beans. Bring to a boil on high heat, then reduce heat and let simmer until beans are tender, approximately one hour.

Drain the beans, discard water, then combine the beans with onions, celery, tomatoes, lemon juice, and salt. Mix well. Pour on olive oil, mix, and let stand for 10 minutes before serving.

Serve as a dinner salad or with Pita bread.

Personal Notes:
I first soak the beans overnight. Also, I add a bay leaf to the water while cooking the beans. This is a delicious salad and keeps well for leftovers!
