Bring Prime Rib to room temperature.

Directions:

Rub with 1/2 t. black pepper, and 1/2 tsp. fresh chopped rosemary.

Preheat oven to 250 degrees. Roast for 4 hours or 20 minutes per pound of meat.

After this, take internal temperature of meat with a meat thermometer. Salt the cap and add a little more pepper and rosemary.
Roast another hour. Take the temperature again.


When thermometer reads
125 meat is rare
130 meat is pink
145 meat is medium

Rest for 15 minutes after Prime Rib is out of the oven.
