1 cup uncooked rice
1 pound ground beef
1 cup black olives, sliced
1 1/2 tsp. salt
1 onion, chopped
2 cups tomato juice or v-8 juice
2 cups boiling water
1 cup grated Cheddar cheese

Directions:
Directions:
Place rice in large mixing bowl and crumble in uncooked beef. Add olives, salt, onion, tomato juice, and boiling water. Pout into 9 x 13 inch baking pan. Bake at 350 degrees for one hour. Reduce heat to 300 degrees and stir and bake an additional hour. Thirty minutes before serving time, sprinkle cheese on top.
