4 c. caramelized onions1 pizza dough6 oz. pacetta, slied3 T. EVOO divided1/4 c. blue cheese, crumbled, divided1 t. minced fresh rosemary, divided

Directions:
Directions:
Preheat oven to 500 with a baking stone on the lower rack.Prepare onions and dough; cover until ready to use.Saute pancetta in 1 T. oil in a skillet over medium-high heat until crisp, about 8 minutes; drain on a paper towel-lined plate. Roll dough and place on pizza peel. bush with additional oil. Top dough with 1/4 each of the onions, pancetta, blue cheese, and rosemary. Slide pizza from the peel onto the stone, and bake until cheese melts and edge begins to brown 8-10 minutes; remove and slice into 8 wedges.
