1 1/2 c flour
1/2 tsp salt
1/4 tsp cinnamon
1 1/2 c sugar
1/3 c butter
4 c rhubarb cut into 1" pieces
1 tsp lemon flavoring
icecream or Cool Whip©

Directions:
Directions:
Sift together the flour, salt, cinnamon, and 1/2 cup of sugar. Cut in the butter until crumbly. Sprinkle half into an 8" pan. Press firmly. Mix rhubarb, 1 cup sugar and lemon flavoring together, spread over crust. Sprinkle remaining flour mixture over rhubarb. Bake 45 to 50 minutes at 375º. Serve warm with icecream or Cool Whip©.
