1 1/2 lbs. thin skinned potatoes
1 c. Hellmann's mayo (can use light)
1/2 c. milk
8 T. grated Parmesan cheese
1/4 c. chopped chives (optional)
1/2 tsp. cracked black pepper

Directions:
Directions:
Preheat oven to 350.
In 3 quart saucepan, cover potatoes with cold water and bring to a boil. Reduce heat and simmer uncovered 15 minutes or until potatoes are tender; drain and cool. Slice potatoes 1/4" thick and arrange in 9 x 13" baking dish; set aside.
In medium bowl, blend mayo, milk, all but 2 T. cheese, chives and pepper. Spoon over potatoes to evenly cover. Sprinkle with remaining cheese. Bake 25 minutes or until golden and bubbly.
