Chicken and Broccoli with Walnuts Recipe

White of one egg
1 tbs. Soy Sauce
1 tbs. cornstarch
1 tsp. minced ginger or 1/4 t. ground
1 lb. boneless chicken breasts cut into strips

1/4 c. soy sauce
1/4 c. dry sherry
2 tsp. minced fresh ginger or 1/2 t. ground
1 1/2 tsp. cornstarch
1 tsp. vegetable oil

To finish:
4 tbs. vegetable oil
4 c. broccoli florets
1 c. walnuts
1/4 c. sliced scallions

Chicken: Mix egg white, soy sauce, Cornstarch and ginger in bowl. Add chicken.
Sauce: Mix all ingredients in small bowl
Finish: In large skillet heat 2 tbs. of the oil over high heat. Add broccoli and stir until crisp tender. Transfer to bowl. Add remaining 2 tbs. oil and add chicken - cook stirring until pieces turn white. Return broccoli to pan, add walnuts and sauce mixture. stir until sauce thickens. Sprinkle with green onions and serve.
