1 16 oz. package frozen, mixed broccoli, carrots, and cauliflower
1 4 oz. can chopped pimento, drained and divided
1 can golden mushroom soup
1/3 c. sour cream
1/4 tsp. pepper
1 3-oz can French fried onions, divided
1 c. shredded Swiss cheese, divided

Directions:
Directions:
Preheat oven to 350. Grease a large casserole dish. Combine vegetables, half of the pimento, soup, sour cream, pepper, half of the fried onions, and half of the cheese in a bowl. Mix
Spoon mixture into prepared casserole dish. Bake 20 minutes.
Sprinkle remaining fried onions and cheese on top of casserole. Bake 5 minutes longer.
Remove from oven. Sprinkle with remaining pimento. Let stand 5 minutes before serving.

You can prepare thi casserole up to 2 days ahead. Place in microwave save dish. To reheat, microwave on medium for 10 minutes.
