2 tbls. butter
1 tsp. vegetable oil
1 (10 oz.) pkg. frozen whole kernel corn, thawed
2 green onions, chopped
2 tbls. chopped red pepper
2 tbls. minced fresh cilantro
salt and pepper, to taste

Directions:
Directions:
In a heavy, medium sized skillet, over medium high heat, melt butter with oil. Add corn and cook until it is beginning to brown. Add onion and red bell pepper and cook for 1 minute. Remove from heat. Stir in cilantro. Season with salt and pepper.
