2 c. leftover mashed potatoes
2 eggs, beaten
2 tbls. flour
8 oz. cream cheese, softened
1/2 c. finely chopped onion, if desired
1/2 to 1 c. cheddar cheese
Small can of French fried onion rings

Directions:
Directions:
Preheat oven to 300. Mix everything together except cheddar cheese and onion rings. Bake for 40 to 45 minutes.
