4 c. new red potatoes, cooked and cubed
1 c. sliced fresh mushrooms
1 stalk sliced celery
4 green onions, chopped

Dressing:
1/3 c. vegetable oil
1/4 c. lemon juice
1 1/2 tsp. Dijon mustard
1 tsp. sugar
1 tsp. instant chicken flavored bouillon

Directions:
In shallow baking dish, combine potatoes, mushrooms, celery, and onions. In a pint jar with a tight fitting lid, combine remaining ingredients. Shake well. Pour over potato mixture. Mix well. Cover and chill 3 to 4 hours to blend flavors.
