1-1/2 lb. sea scallops (about 18)
2 Tbs. olive oil
2 cloves garlic, crushed
1/4 tsp. freshly ground pepper
1/4 tsp. salt
1 small lemon, rind removed, flesh cut into 1/2" pieces
2 slices thin Italian bread, cut into 1/2" cubes, browned in oven
2 Tbs. chopped chives
1 lb. mushrooms, chopped
6 Tbs. butter

Rinse scallops in cold water, drain well. Place scallops in bowl. Toss a little olive oil, salt and pepper with the scallops. Place scallops in hot skillet. Cook each side approximately 4-5 minutes. Stir in the lemon. In another skillet prepare mushroom sauce: Heat 6 Tbs. butter, until lightly brown, add chives and 1 lb. chopped mushrooms. Heat on med-high heat for 1-2 minutes.
