1 small onion, finely chopped
1 tsp. minced garlic
1 10-ounce can mild diced tomatoes with chilies
1 14.5 ounce can reduced-sodium chicken broth
1 30-ounce can fat-free refried beans
Garnishes: Shredded cheddar cheese, sour cream and corn chips

Directions:

Spray a Dutch oven or other large saucepan with the nonstick cooking spray and heat at medium-high. Add the onion and garlic and saute until the onion is translucent, being careful not to brown the garlic, about 3-5 minutes. Stir in the diced tomatoes, chicken broth, and refried beans. Bring to a boil, reduce heat and simmer, uncovered for 15 minutes. Ladle into bowls and top with some shredded cheese and a dollop of sour cream, if desired. Serve with corn or tortilla chips.
