8 tortillas
1 lb hamburger or 2 cups of diced chicken
1 medium onion, chopped
1/2 cup sour cream
1 cup of shredded cheddar cheese
2 Tbs snipped parsley
1 tsp salt
1/4 tsp pepper
1 can (15 oz) tomato sauce
2/3 cup water
1/3 cup chopped green pepper
1 Tbs chili powder
1/2 tsp ground cumin
2 whole green chilies, chopped (optional)
1 clove garlic, finely chopped (optional)
1/2 tsp oregano (optional ingredient that Kathy added to Debbie's recipe)

Brown hamburger or chicken and drain grease. Stir in onion, sour cream, cheese, parsley, salt and pepper. Cover and reserve. Heat remaining ingredients to boiling and stirring occasionally. Reduce heat. Simmer uncovered for 5 minutes and pour into ungreased 8 or 9 inch pie pan. Dip each tortilla into sauce to coat both sides. Spoon about 1/4 cup of meat mixture into each tortilla. Fold each tortilla around filling and arrange in ungreased , oblong baking dish (12x7 1/2 inches). Pour remaining sauce over enchiladas. Cook uncovered in 350 oven until bubbly or about 20 minutes. Garnish with shredded cheese, sour cream, shredded lettuce, chopped onions, and hot sauce (if desired!).
