Cookie Dough:
1 c.white sugar
1 c. molasses
1 level T. ginger
1 tsp. lemon extract
1 c. shortening
1/3 tsp. salt
3 tsp. soda dissolved in 1 c. sour milk
Icing:
1 c. powdered sugar
1/4 c. butter or margarine
1/2 tsp. vanilla
1 tsp. water

Directions:
Directions:
Preheat oven to 350 degrees
Cookie Dough:
Mix in order given for cookie dough. Add enough flour to roll. Form dough into balls and place on cookie sheet. (If dough is too soft to form into balls, refrigerate dough for about an hour.) Bake 10-15 minutes in 350 degree oven. Time may vary depending on how your oven regulates the heat. Let cookies cool.
Icing:
*You can double this recipe if you would like more icing on your cookies...
Mix softened butter or margarine with powdered sugar. Add water and vanilla. Beat until fluffy.
Frost cookies after cooled. Enjoy!

This is a very good recipe. It's a great source of iron, and with the frosting added, a good source of extra pounds for those that need that sort of thing.
