Crepes:
1 1/2 c flour
1 1/2 c milk
salt
6 large eggs
Filling:
1 lb. Hamburg, cooked, cooled and drained
1 lb. ricotta cheese
1 pkg. chopped spinach, cooked, cooled and drained
2 eggs
2 T. parsley
2 T. Parmesan cheese
salt, pepper and garlic powder to taste

Crepes:
Place all items in a food processor or blender. Mix until smooth.
Use 1/4 cup batter per crepe. Pour into a heated non-stick pan (6" or 7" diameter)brushed with a little bit of cooking oil. Cook on one side only until batter is just set. Place on wax paper to cool.
Filling:
Mix all ingredients together.
Place 1 T. of filling on cooked side of crepe. Roll and place in baking dish that has sauce on the bottom. Top with more sauce and Parmesan cheese. Bake in a preheated 350F oven for 20 minutes.

This dish was served every year when our family went sking with the Ricci's and Morrisettes in Bridgton, Maine. Vicky would stay back at the house and cook up a storm while the rest of us went to Pleasant Mt and skied all day. Marty would call Mr. Morrisette Jean Claude. Dad and Danny would cook breakfast for the group and after a day of skiing and sitting down to a great meal the kids would go upstairs and play pool. We had some great times on these trips.
