3 T. shortening
1 c. sugar
1 egg
1 3/4 c. flour
3/4 c. milk
2 tsp. baking powder
1 tsp. vanilla
1 1/2 c. blueberries

Directions:
Directions:
Beat shortening, sugar and egg together by spoon. Combine flour and milk; pour slowly into batter. Add baking powder and vanilla. Slowly fold in blueberries. Pour into a glass 9 x 9" baking dish coated with non stick cooking spray. Bake at 325 for 50 - 55 minutes. The cake should be golden brown on top.

I found this recipe in the Altoona Mirror. I like it as it is a moist cake and is small but plenty for 2 people.
