1-3/4 C. Flour
1-1/2 C. Sugar
1 tsp. Baking Soda
1/2 tsp. Salt
2 Eggs
1 C. Mashed Banana (about 2 but I use 3)
1/2 C. Oil
1/4 C. + 1 generous Tbsp. Sour Cream
1 tsp. Vanilla

Directions:

Heat oven to 325

Mix ingredients together and pour into a loaf pan sprayed with non-stick spray.

Bake at 325 for 1 hour and 25 minutes.

This bread is fantastic - it stays nice and moist and many people have thrown out their recipes and adopted mine.
