2 1/4 cup sifted flour
2 1/2 tsp baking powder
1/2 tsp salt
1 1/2 cup mashed ripe bananas
1 1/4 cup sugar
1/2 tsp baking soda
1/2 cup shortening
2 eggs, unbeaten
1 tsp vanilla

Directions:
Directions:
Have shortening at room temperature. Sift flour, sugar, baking powder, baking soda, and salt in mixing bowl. Add shortening, 1/2 cup of the bananas, and eggs. Beat 2 minutes. Add remaining cup of bananas and vanilla, and beat 1 minute more. Turn into 9x13" pan. Bake 30-35 minutes at 350. Frost with your favorite frosting.
