4 yellow squash
1/2 lb. bulk sausage
1 chopped onion
1 c. Italian bread crumbs
1 egg, beaten
1/2 cup Parmesan cheese
1/4 tsp. salt
1/4 tsp. thyme
several dashes of lemon pepper
finely shredded cheddar cheese

Directions:
Directions:
Cut stems and ends off of squash and boil whole in water for about 10 minutes. Once cooled, split squash long ways and scoop out center into a bowl and set aside. Brown sausage and onion and remove from heat. Add remainder of ingredients except cheddar cheese. Add scooped squash to mixture. Fill the empty squash with mixture and top with cheddar cheese. Bake 30 minutes on 350
