2 c shredded zucchini
2 eggs
1/4 c finely chopped onion
1 tsp garlic salt
1 1/2 c baking mix
salt and ground black pepper to taste

Directions:
Directions:
In a large bowl, combine zucchini, eggs, onion, and garlic salt. Blend in baking mix, salt and pepper. Heat 1/2 inch of oil in deep fry pan. Drop batter by spoonfuls into hot oil, and fry until evenly brown and fluffy. Drain on paper towels. Sprinkle with salt before serving.
