1 tbsp. Olive Oil
1.5 pounds chicken breasts, cubed
2 cups chicken broth
2 4oz cans green chilies
2 tsp garlic powder
2 tsp ground cumin
1 tsp oregano leaves
1 tsp cilantro
1/2 tsp cayenne pepper
2 10oz cans white kidney beans (I use Cannelini)

Optional: Pepper jack cheese or Monterey jack cheese, jalapeņos, sour cream, rice or cornbread

Directions:
Directions:
Saute chicken in olive oil. Remove chicken with a slotted spoon. Stir in broth, garlic powder, cumin, oregano, cilantro and cayenne pepper. Chop chilies and add them with their juices to the mixture. Bring to a boil, reduce heat, cover and simmer 30 minutes. Stir in chicken and beans. Cook gently for 20-30 minutes more. Serve over rice or by itself.
