"A man who was fond of wine was offered some grapes at dessert after dinner. "Much obliged," said he, pushing the plate aside; "I am not accustomed to take my wine in pills."--Jean Antheleme Brillat-Savarin, The Physiology of Taste
This recipe for Homemade Noodles, by Amber Laffoon, is from Endicott Family Recipes,
one of the cookbooks created at FamilyCookbookProject.com. We help
families or individuals create heirloom cookbook treasures.
Beat egg with fork, add salt and milk and mix. Add flour gradually and mix. Roll out on a floured surface and cut with a knife or noodle cutter. (For best results) Let them dry out over night. Cook them in preferred broth until done on medium to low heat. Usually takes about 30 minutes or so to cook depending on the quantity of noodles.
