3/4 c. sifted flour
1 tsp. double-acting baking powder
1/2 tsp. salt
1 egg
1/2 cup water or beer
3/4 lb. shrimp or boneless fish pieces

Directions:
Directions:
Rinse & thoroughly dry fish or shellfish. Sift flour, baking powder & salt together. Beat egg slightly, add dry ingredients and stir until blended. Add water, a tablespoon at a time, stirring constantly, until batter is smooth and the consistency of a custard sauce. Dip seafood in batter one at a time, fry in hot fat (350F) until golden brown, almost 3 minutes. Drain.
